Quinoa and Feta Salad

Fresh and vibrant, this Quinoa and Feta Salad is a deliciously light yet satisfying dish. Made with fluffy quinoa, crisp green beans, tangy feta, and zesty lemon, it's packed with flavour and perfect for a healthy lunch or side. Easy to prepare and full of nutrients!

Ingredients

  • 200g quinoa, uncooked 
  • 300ml vegetable stock 
  • ​​​​​​​220g green beans, cut into 4cm pieces  
  • ​​​​​​​1 block feta cheese, crumbled 
  • Handful flat leaf parsley, finely chopped 
  • 1 lemon, juice and zest

Method

Place the pearl barley and green beans into a metal cooking dish and pour over the hot stock. Steam at 100°C for 22 minutes. 

Fluff the grains with a fork and add the green beans, feta, parsley, and lemon. Combine well and enjoy.
