Lemon Drizzle Loaf

Learn how to make a fluffy lemon drizzle loaf with this easy-to-follow recipe. Perfect for tea time or any occasion, this zesty dessert will delight your taste buds!

Ingredients

  • 250g unsalted butter  
  • 250g caster sugar  
  • 250g self-raising flour
  • 5 eggs  
  • Zest of 2 lemons 

For the drizzle: 

  • 75ml lemon juice  
  • 75g caster sugar  

  

Method

  1. Preheat the oven to 180 fan (circulaire). Line the loaf tin. 
  2. Using the Smeg Stand Mixer with the beater attachment, beat together the butter and sugar until pale and creamy. 
  3. Add the flour, eggs, and lemon zest and beat again until combined. 
  4. Add the mixture into the loaf tin and bake for 50-55 minutes. 
  5. For the drizzle, mix in a bowl the lemon juice and caster sugar. Drizzle this over the cake whilst still in the tin. Let the cake cool fully.
