Hot Cross Bun Bread and Butter Pudding

Learn how to make a delicous Hot Cross Bun Bread and Butter Pudding with this simple recipe. The perfect way to use up leftover hot cross buns and treat your guests!

Ingredients

  • 3 eggs  
  • 250ml whole milk  
  • 230ml double cream  
  • 35g caster sugar  
  • 1tsp vanilla  
  • 8 hot cross buns (any type – we used chocolate chip and salted caramel) 
  • Mini eggs  
  • Chocolate chips

Method

  1. Preheat the oven to 180 degrees fan (circulaire). 
  2. To make the custard mixture, add the eggs, milk, double cream, caster sugar, and vanilla into a bowl and mix to combine. 
  3. Meanwhile, arrange the hot cross buns. Slice them in half and butter both sides. Layer the bottom half of the buns on the base of a greased ovenproof dish. 
  4. Pour half of the custard mixture over the buns and scatter the mini eggs and white chocolate chips. Then place the top half of the hot cross buns on top. 
  5. Pour the rest of the custard mixture over the top of all the buns. 
  6. Bake for 35 minutes or until golden.
