Hot Salmon Salad

Light and satisfying, this recipe brings together perfectly cooked salmon with crisp fresh greens. Easy to prepare, it works beautifully as both a main course or a side dish.

Ingredients

  • 500g new potatoes
  • 200g asparagus
  • 250g salad leaves  
  • Bunch of Parsley
  • 140g radishes
  • 4 salmon fillets
  • Spring onions

For the dressing:

  • 3 tbsp lemon juice
  • 200 ml olive oil
  • 2 tsp wholegrain mustard
  • 1 chilli

Method

  1. Put the new potatoes and salmon into the countertop steam oven for 20 minutes. Add the asparagus for the final 10 minutes. 
  2. Then, make the dressing. Mix together the lemon juice, olive oil, mustard, and chopped chilli; set aside. 
  3. In a large bowl, toss together the potatoes, asparagus, salad, herbs, and chopped radishes. Spread the salad mix over a large platter, then flake the salmon over the top and drizzle the dressing over. Top with spring onion to serve.
