Lemon and Black Pepper Chicken

Learn how to make delicious lemon and black pepper chicken with this simple recipe—perfectly balancing refreshing citrus flavours, a hint of spice, and beautifully roasted vegetables.

Ingredients

Marinade:

  • 3 tbsp honey  
  • 2 tbsp Dijon mustard  
  • 3 garlic cloves
  • Cracked black pepper 
  • 2 lemons, juiced

Lemon Pepper Chicken:

  • 4 boneless and skinless chicken breasts
  • 3 sprigs of rosemary
  • 1 lemon, sliced
  • 700g baby potatoes
  • Asparagus
  • Carrots

Method

  1. Preheat the oven to 190°C using the circulaire function. 
  2. Begin by making the marinade. Mix all the marinade ingredients into a bowl until well combined. Rub half of the marinade over the chicken thigh; allow it to sit in the fridge for 15 minutes. 
  3. In a tray, arrange the lemon slices and rosemary in the bottom of the roasting tray. Add the potatoes to the tray, then place the marinated chicken breasts, asparagus, and carrots on top. Drizzle the rest of the marinade over the baking tray. 
  4. Roast for 40 minutes until the chicken and potatoes are cooked.
