Bao Buns

Discover how to make fluffy bao buns from scratch with this simple step-by-step recipe. Perfect for filling with your favourite ingredients!

Ingredients

  • 250ml tepid water 
  • 1 x 7g sachet fast-acting dried yeast 
  • 450g strong white bread flour, plus extra for dusting 
  • 1tsp salt 
  • 50g caster sugar 
  • 1tsp baking powder 

Method

  1. In a small jug, whisk together the water and yeast. 
  2. In the stand mixer bowl, combine the flour, salt, sugar, and baking powder together. Add the yeast mixture to the flour, and with the dough hook attachment, knead on setting 1-3 for 5 minutes until elastic and smooth. 
  3. Lightly oil the mixing bowl and cover with cling film. Leave to rest in a warm place for an hour or until doubled in size. 
  4. Form the dough into a sausage shape on a lightly floured surface. Cut the dough into 10 even-sized balls. 
  5. Roll the balls into ovals with a rolling pin, brush with a little oil, then fold in half over a cocktail stick to make a small gap in the fold of the dough. 
  6. Place the dough buns onto a lined baking tray, cover with cling film, and leave to rest in a warm place for 15 minutes. 
  7. Preheat the steam oven for 100ºC for 8 minutes and place the buns in the steam oven during this preheating process. Ensure the buns are spaced out to have enough room to grow. 
  8. Remove from the steam oven and allow to cool. Take out the cocktail sticks and serve the buns filled with slow-cooked beef brisket, chilli sauce, and coriander.
