For the marinade:
- 8 tbsp apple balsamic vinegar
- 4 tbsp vegetable oil
- ½ tsp salt
- ½ tsp chilli flakes
- Pinch of cinnamon
- 3 Chicken breast, diced
For the salad:
- 2 ripe papayas, peeled and sliced into wedges
- ½ a cucumber, shaved into ribbons
- 2 carrots, peeled into long strips
- 4 spring onions, finely slices
- 50g pomegranate seeds
- A handful of coriander, chopped
- Mint leaves, chopped
For the dressing:
- 150ml fresh orange juice (use the Smeg Citrus Juicer)
- 2 tbsp white wine vinegar
- 1 tsp soft brown sugar
- 1 tbsp olive oil
